Development of separation technology

Separation technology has advanced significantly in recent years. Due to the growing demand for consistent and guaranteed quality, various systems and blade configurations have been designed to effectively separate hard particles from raw materials.

For existing separation units on the grinder or stopper, a wide range of blades and separation plates is now available to optimise the process. In addition, universal separation sets are available in various designs for machines without an integrated separator.

An optimal separation result is determined not only by the choice of separation system and settings, but also by the correct cutting components in the grinder.

The importance of the correct knife arrangement

The correct blade configuration ensures optimal reduction of the raw materials. Cutting elements tailored to the processing temperature and the desired grain structure are essential for consistent dough preparation.

In addition, monitoring service life and wear ensures fewer unplanned downtimes, higher output and lower operating costs. In particular, choosing the right separation blades and plates has a direct impact on the efficiency of the separation process.

Separator sets in three versions

Mechanical separator set

This set consists of an outlet pipe, integrated into the support cross, and an adjustment sleeve for manual adjustment. The setting is determined based on the operator’s experience and judgement.

Advantages:

  • Simple and robust
  • No electricity or compressed air required
  • Highly suitable for smaller batches and a stable workforce

Pneumatic separator set
With a pneumatic separator set, the maximum processing temperature is around 0 to -2 °C. At lower temperatures, the separation may become inaccurate. A controller can be used to precisely adjust the opening and closing times and the frequency of the pneumatic valve to achieve the desired result.

Electric separator set with conveyor screw
This is a fully automatic and adjustable separation system, equipped with a conveyor screw for the removal of solid particles. This system can deliver good separation results down to approximately -5 °C.

The continuous product flow allows processing at lower temperatures and significantly reduces the risk of freezing at the separation opening. The speed of the conveyor screw is adjustable for optimum efficiency.

Preparation for testing and installation

When testing a separator set with a conveyor screw, the following points are important:

  • 220V power supply
  • Sufficient raw materials to properly assess the blade configurations
  • Time and assistance with the grinder
  • Input and feedback on test results
  • Food-grade fat for assembling the cutting parts

For pneumatic separator sets, additional compressed air with the correct hose couplings is required.

The mechanical separator set operates completely independently and requires no electricity or compressed air.

Safety

Almost every Wolf unit is fitted with a protective cover featuring a safety switch. For testing purposes, this switch must be temporarily deactivated by a qualified technician. When the separator set is installed permanently, a cut-out can be made in the cover so that the protective cover retains its full safety function.
